In 1897, before the FDA existed, the US government passed its very first consumer-protection law for a food or drink—and it was about whiskey. The Bottled-in-Bond Act was a response to an era when ‘bourbon’ might be neutral spirit cut with tobacco spit, iodine, and prune juice. To carry the bonded label, a whiskey had to be the product of one distillery and one distilling season, aged at least four years under federal supervision, and bottled at exactly 100 proof.
