Devils River Distillery is the San Antonio-based craft American whiskey operation built around one of the most editorially specific natural-source water claims in modern American distilling: water sourced from the Devils River — the remote spring-fed river in Val Verde County, far southwest Texas, that's frequently cited as one of the most pristine and ecologically protected river systems in the entire United States. Founded in 2015 by Mike Cameron and a small founding team, Devils River operates production and a public-facing tasting room in San Antonio while sourcing its production water from the Devils River roughly 200 miles to the west of the city. The Devils River water source is genuinely distinctive. The river — which flows through the Devils River State Natural Area in Val Verde County, on the way to its confluence with the Rio Grande at Lake Amistad — is a spring-fed system that emerges from the Edwards-Trinity aquifer carrying limestone-filtered water with mineral characteristics similar to the limestone-spring water of Kentucky's bluegrass country.
