The founding identity is unusual for a craft American whiskey distillery. Claire Marin started Catskill Provisions in 2009 as a sustainable food company built around honey production — the Sullivan County and broader Catskill region is one of the most active honey-producing regions in the Northeast, with the surrounding wildflower meadows and farm-property apiaries supporting commercial-scale beekeeping.
