Catskill Provisions Distillery is the Long Eddy, New York craft operation founded in 2009 by Claire Marin — and one of the most editorially distinctive Catskill Region craft spirits producers because of its founding identity as a sustainable food-and-honey operation that evolved into a meaningful craft whiskey producer over the past decade. Located on the West Branch of the Delaware River in Sullivan County (the Western Catskills region, roughly two hours northwest of Manhattan in deep upstate New York), Catskill Provisions occupies a working farm property that integrates honey production, food product manufacturing, and small-batch distilling into a single agricultural operation. The founding identity is unusual for a craft American whiskey distillery. Claire Marin started Catskill Provisions in 2009 as a sustainable food company built around honey production — the Sullivan County and broader Catskill region is one of the most active honey-producing regions in the Northeast, with the surrounding wildflower meadows and farm-property apiaries supporting commercial-scale beekeeping.
