The technical reality is complex but verifiable. Traditional whiskey aging involves a long series of organic chemical reactions between the spirit, the wood, and atmospheric oxygen — esterification, oxidation, tannin extraction, and dozens of other reactions that produce the mature flavor characteristics drinkers associate with aged spirits. These reactions normally occur slowly over years or decades at standard cellar temperatures.
