Lost Spirits is the Los Angeles craft spirits operation founded in 2010 by Bryan Davis and Joanne Haruta — and the most editorially singular American craft distillery operation because of the brand's commitment to a genuinely radical aging-technology approach that essentially no other producer has attempted at meaningful scale. The Lost Spirits THEA reactor (Targeted Hyper Esterification Aging — the patented Davis-designed reactor system) artificially accelerates the chemical reactions that occur during traditional barrel aging, allowing Lost Spirits to produce spirits with mature 20+-year flavor characteristics in days rather than decades. Traditional whiskey aging involves a long series of organic chemical reactions between the spirit, the wood, and atmospheric oxygen — esterification, oxidation, tannin extraction, and dozens of other reactions that produce the mature flavor characteristics drinkers associate with aged spirits.
