Standard Wormwood Distillery

Standard Wormwood Distillery is the Brooklyn, New York craft operation built around one of the most editorially specific category commitments in American craft spirits: a near-exclusive focus on absinthe production in the traditional Pontarlier and Pernod-era French style. Located in the Industry City complex in Brooklyn's Sunset Park neighborhood (a converted industrial warehouse district that's become one of the most active craft-food-and-beverage and small-manufacturing zones in NYC), Standard Wormwood occupies a working distillery space that combines the production floor with an on-site tasting room and bar program. Absinthe production is a deliberately complicated business. The category was legally banned in the United States from 1912 until 2007 (over the toxic-thujone-content concerns that turned out to be substantially overstated by Prohibition-era temperance advocates), and even after legalization the production category remains relatively small in the US — fewer than 20 American distilleries produce absinthe at commercial scale, and most of those treat it as a side product alongside their main whiskey or gin programs.
